I was in a total baking mood this weekend. A while ago, I found this great recipe for cinnamon pancakes that Steven and I have been dying to try. So I figured this weekend was as good as any! I’ve never made pancakes from scratch before, so I was a little nervous how they might turn out (my pancakes usually come straight from the box — just add water). But heck, it seems hard to screw up pancakes!
So I headed to the store to get the ingredients I was missing, made a mess of the kitchen and pulled together some yummy pancakes! These were great pancakes with a little cinnamon surprise in every few bites. In the future, I would probably make a fresh strawberry sauce to top them with and maybe even a little whipped cream. Here’s the recipe in case you’re interested:
CINNAMON PANCAKES
makes 12-16, 4-inch pancakes

1 1/2 cup flour
2 Tablespoons sugar
1 3/4 Tablespoon baking powder
1 teaspoon salt
1 1/2 cup milk2 eggs
1 Tablespoon honey
1/2 teaspoon vanilla
2 Tablespoons cold butter
1/2 teaspoon cinnamon
- In medium bowl, combine flour, sugar, baking powder and salt.
- In a separate medium bowl, combine milk, eggs, honey and vanilla.
- Cut the cold butter into small 1/4 inch pieces and add cinnamon. Mix it together with your fingers until well incorporated, but not overmixed.
- Add the wet ingredients to the dry ingredients until just combined. Keep cinnamon chunks to the side.
- Heat a skillet on the stovetop and add 1/4 cup batter. Add a few of the cinnamon chunks to the batter once in the skillet. Once the pancake begins to bubble, flip and cook the other side. Repeat until all the batter is used.
- Top with a little maple syrup, and enjoy!
